Oahu by far, it has so many things to do and has the most "night life". Diamond Head, North Shore, Pearl Harbor are just a few of the things that I can think of, but I am sure that on any one of the islands you will have a great time, you can't go wrong in Hawaii.

This probably depends on what your definition of "fun and interesting" is. If you want a nightlife and a big city environment, then go to Oahu. If you're looking for great scenery (beaches, mountains, tropical forests, etc.), peace and quiet, and adventure, then go for Maui. In terms of scenery, it doesn't get any better than Maui.
I am actually in Maui right now. It is my second time here and I absolutely love it. Some of the sights that I have witnessed here these past couple of days are truly what I consider to define the word "paradise."
